10 Minute Chocolate Chip Muffins

An easy and healthy treat! This recipe contains honey, which is a far superior sweetener of foods compared to sugar. The reason for this is that it contains lots of nutrients that sugar doesn't. It should still be used sparingly. Raw honey is the best kind of honey as it contains propolis, which gives honey its antibacterial properties and is mostly lost when processed. Still, darker honeys i.e. buckwheat honey, contain antioxidants and has wound-healing properties.

Ingredients

  • 155  grams (3/4 cup) Cashew nut butter 
  • 2.5 very ripe large Bananas
  • 3 large Eggs
  • 1.5 teaspoons Vanilla 
  • 0.5 teaspoon Baking soda 
  • 1.5 teaspoons Apple cider vinegar 
  • 50 grams Chocolate chips (75% cacao or more)
  • 1.5 tablespoons Honey 

 

Method

  • Preheat oven to 200C.
  • Place all ingredients except the chocolate into a blender or food processor and mix thoroughly.
  • Add the chocolate chips (or crushed chocolate bar - 75% cacao or more) and stir with a spoon.
  • Pour batter into a greased 12 muffin tin and bake in the oven for 8-10 minutes or so. Serving size is 1 muffin. You could also use mini muffin tins, which takes around 6-8 minutes to bake, but then the serving size is 2 mini muffins.
