2 Ingredient Cookie Bars

Try our super simple and delicious Cashew Cookie Bars! This is one of the quickest snacks and the perfect hit for your sweet tooth. 

Cashews are a good source of the monounsaturated fat oleic acid, the same found in olive oil and which is also called omega 9. This oil has been found to protect against heart disease and cancer. Still, cashews are lower in fats and higher in proteins than other nuts and are a very good source of magnesium, potassium, iron and zinc. These nutrients help your immunity, improve energy levels and help you sleep.

Ingredients:

  • 170 grams of cashew nuts
  • 170 grams of dates

Method:

  • Line a 20cm x 30cm baking tin with cling film.
  • In a blender or food processor, blitz the cashews until a fine powder forms. Add the dates and continue to blitz until smooth and well combined.
  • Press the mixture evenly into your prepared tin and freeze for 30 minutes. Turn out of the tin, remove the cling film and cut into bars. Wrap in grease proof paper and store in an airtight container in the fridge for up to one week.
  • Serves 7.
