Delicious Breakfast Parfait

A healthy and delicious mix of sweet creaminess! A parfait is a frozen dessert traditionally made with cream, egg and sugar syrup. But our healthy version tastes delicious without the calories! The coconut and berries make this yummy treat sweet enough. We love all the superfoods in this recipe! 295 calories per serve.

Ingredients

1 tbsp Chia Seeds
3/4 cup Greek Yoghurt
1/8 cup Desiccated Coconut
1/2 cup Blueberries

Method

Put the blueberries in a pretty glass, jam jar or bowl...the berries can be fresh or frozen. Mix the yoghurt, coconut and chia seeds together and serve over top of the berries. Set in the fridge for 10 minutes. 

If it's warm outside you can also prepare it ahead of time and set it in the freezer to chill.
