Double Chick & Feta Salad
This salad is light, but still loaded with fibre and protein to keep you full. Chicken is a good source of tryptophan, important for making your mood boosting serotonin. It also helps you make melatonin to help you sleep.
Ingredient
150 grams Chicken breast
1.5 cups (230 grams) Chickpeas
1.5 cups (140 grams) Red pepper
0.5 cups (75 grams) Feta cheese, crumbled
1 tbsp Red wine vinegar
4 cups Rocket (loosely packed)
Method
Poach (boil) chicken in water until the centre is cooked and set it aside to cool. Shred the chicken and combine with the chickpeas and pepper in a large bowl. Add the vinegar to chicken mixture and put on top of the rocket on the plate. Crumble feta over the salad and serve.
Serves 2 people.
