Thai Chicken and Cashew Stir-fry
The infusion of flavours in this light but filling dish are sure to delight! Fermented soy foods like tamari have been found to increase hyaluronic acid, which keeps your joints moving smoothly and skin looking healthy. Great for running after your little ones!
Serves: 2. Calories: 395 per serve. Prep: 5 minutes. Cook: 15 minutes.
INGREDIENTS
- 200 grams chicken breast
- 2 garlic cloves (medium)
- 1 white onion (medium)
- 1/3 chilli pepper
- 1 spring onion (medium)
- 3/4 cup sliced red pepper (medium)
- 1 kefir lime leaf (optional)
- 3 tbsp cashews
- 1/3 cup brown rice
- 1 tsp honey
- 1 tbp tamari soy sauce
- 1 tsp fish sauce
- 1 tsp coconut oil
METHOD
- Cook the rice according to the package instructions.
- Chop the chicken into chunks and set aside.
- Slice the pepper and white onion. Dice the garlic and chilli. Set aside.
- Heat a frying pan on medium heat with coconut oil. When hot, add the onion and pepper, cooking until starting to soften. Add the chicken, chilli and garlic (and optional kefir lime leaf) and stir until the chicken is no longer pink.
- While that is cooking, mix the tamari, honey and fish sauce in a small bowl before adding to the chicken mixture. Stir through so the flavours mix well. Stir the cashews and spring onion through and turn off the heat.
- Serve with rice.
